Assigning a 2 position switch with a "Value"

I am new to the deviationtx world, i am watching youtube vids and reading forums to familiarize myself with it, however I reached a point where i could not proceed further , so I would be greatful for any assistance.
I am currently trying to setup an admiral rx600sp receiver in a warbird and I would like to know the following :
1- how to setup a 2 position switch similar to the following clip :
2-when assigning channels for a model , is it possible to assign the rotating knob to control the flaps instead of a switch ?
