The protocol files for the 7e are unlikely to work across different builds, since they depend on where things in the build wind up.
The various .ini files generally don't change, but that's not guaranteed. If they do change, it should be noted in whatever discussion there is in the test build. Mostly, .ini files carry forward: if you don't update them, you'll get default values for whatever they changed. However, you ought to update any that you haven't edited, just in case.
As a final warning, some of the test builds are for features that aren't supported in nightlies, and a model.ini file saved by one of those may not work if you try and go back to the nightly build.
