The Devo 7E has no means to use an analog potentiometer.. but for tuning an APM board, this is pretty much required if you want to do it in-flight. Is there any means to assign i.e. channel 6 to a trim key and have it increase and decrease the output in steps when pushing it up or down/left or right? I know you can set them up as switches, but not if this kind of stepping is possible.

That's just a normal trim switch, set to channel 6.
Go to the Trims menu, change the source on the first trim to channel 6, and set the trim step to .5.
Next, configure channel 6 as a complex mixer, input from channel 6, 1-1 curve, scale of 0, and make sure Trim is enabled.
You're all set. That should let you step from -100 to 100 in 1% increments. Changing the trim step will give you finer control with less range.
You might want to put a bar or small box showing Ch6 on the main page.
FWIW, another way to tackle this would be a pot that would output PPM to the PPM input of the Devo7e, and "Extend" PPM input mode to get that as another input. But using the throttle trim is a lot neater.

I did this yesterday, but it actually, when scaled to 150, goes from -75 to +75. I had to increase limit and scale to 200 in both directions for it to actually hit +/- 100.

Hmm. I tested this on both 4.0.1 (on a 6s) and nightlies + mods from lots of people, so I'm a bit surprised that it's different.
I'd be leery of adjusting scale - I got some odd behaviors doing that - and adjust the step size on the trim instead.
