A lot of aircrafts use a "gear" channel for beginner/middle/advance etc. From your experience, is there any benefit to using that feature VS customize my scale/curve my ail/ele? Does it pretty much do the same thing or does the stock gear setting have other features?

Hi,
Depends on the model.
200qx + 350qx gear means switching to agility mode or stability / stagility mode.
Much different than a simple D/R.
Flying free is different than with a stability max angle or bailout option.
You will have to test for yourself what works out for you, what you like.
Are you a beginner?
Some stability angle limitation might help for first flights.
But you should train on a RC SIM or glider before.
After MPX EGP, 120SR and SIM training a Parkzone P51D Mustang or F4F Wildcat was no problem with 70-80% D/R. It had no gear tricks.

What about quads like the syma x5c or jjrc? They have beginner/advanced modes. Is that channel programmed on the RX or tx? And does the deviation protocols ignore that if it is a channel? Because I tried to map all the channels and it wasn't on any of them.

Hard to say o these quads with proprietary radio protocols and hardware what's going on. Many of them just change the rates, and don't change other behaviors, so it could be done either in the flight control software on the quad, or in the Rx.
The current SYMAX protocol in deviationTx doesn't only uses four channels + a flags channel for video, photo & flip. No channel for mode. Ditto for the V202 channel, except it's got more flags and an LED blink speed.

Thanks mwm that's good to know. I think we should have an FAQ with that info to help new comers and increase the community.
For example, I was looking for a guide it even explanation on customizing rate changes, particularly with the curve and points but couldn't really fund any. For example for a lower rate I've seen some people taper off the expo curve while others punch it. I'm still trying to figure out which I should use or just keep it straight.

These aren't really deviationTx questions. Well, maybe the info about rates on these low-end quads, as I don't know of any other firmware that can deal with a lot of them.
The answer to your question about rates is to experiment and use what feels best for you. Some people like sticks that are sensitive near the center, so they can fly with very little stick movement. Other people like sticks that provide very fine control near the center. And since different models will have different responses, it's not uncommon for one person to have different settings for different aircraft.
Personally, I'm not much of a fan of dual rates. I tend to set things up so the high rate mode and low rate modes have similar center-stick behavior, and provide expo on the high rate mode so I can get to 100% in that direction, which low rates mode won't do.
But hey, if you want a FAQ, I believe anyone can edit the github Wiki. You could start one and encourage people to contribute to that. Feel free to copy anything I've posted here to it.
